I’ve been looking for a good excuse to make Rum Punch.  Well, what better reason than to celebrate my 18 year wedding anniversary.  The time has flown. My husband likes to say we met when I was just a teenager because I was 19, almost 20 back when we met at college. Well, 18 years ago, to honor our place of meeting, we got married at the college campus chapel. It was a beautiful celebration as all weddings are, and after our reception we honeymooned at Anse Chastanet on St Lucia.  We said “we will definitely be back, maybe to celebrate our five year anniversary.”  Well, I didn’t know how much that excursion was at the time, and how extra special that “premium hillside” room was with the view of the Pitons. When I found out I knew we wouldn’t be going back ANYtime soon.  Maybe for our 25th anniversary? A girl needs a dream. NingXia Rum Punch #essentialcocktail #youngliving Being on an island in the Carribean Sea, we had the opportunity to have a few Rum Punch cocktails.  Captain Jim took us out on a private sailing trip and he surprised us with a refreshing pitcher of his own Rum Punch recipe. I never did get his recipe but I do know Bobby Flay’s recipe, and Bobby says the key to remember is “1 part sour, 2 parts sweet, 3 parts strong, 4 parts weak.”  Perfection, that’s all I have to say.  And now I need to get back to my Ningxia Rum Punch and celebrating with my husband. Ningxia Rum Punch

Inspired by Bobby Flay’s Rum Punch recipe at foodnetwork.com “1 part sour, 2 parts sweet, 3 parts strong, 4 parts weak” Ingredients:

  • 1 C fresh lime juice
  • 1 C water
  • 1 C sugar
  • 1 C Young Living Ningxia Red Juice
  • 2 C white rum
  • 1 C coconut rum
  • 2 C pineapple juice
  • 2 C orange juice
  • 12 drops Young Living Citrus Essential Oils (I used 3 drops each Orange, Lemon, Lime, and Citrus Fresh)
  • Ice

Make a simple syrup with the water and sugar by heating them to a slight boil and stirring until the sugar is dissolved. Set aside to cool. Add all other ingredients to an extra large pitcher or punch bowl.  Stir in the cooled simple syrup.  Fill glasses to the top with ice. Pour punch into glasses and garnish with an orange or pineapple slice. Note: In the original recipe the “2 parts sweet” is traditionally grenadine.  Grenadine’s purpose in rum punch is sweetness and red color.  Here I substituted grenadine with the simple syrup and Ningxia Red juice which serves the same purpose, but most likely is healthier.  Read more about the amazing Ningxia Red juice below.
